WALNUT


Fruit of the walnut tree, belonging to the juglandaceae family, with a crunchy texture and a light bitterness. There are two main forms : the fresh walnut with a water content above 20%, which gives it a soft flesh and a fresh aroma, and the dry walnut with a water content below 10%. Because of their lipid composition, walnuts are naturally rich in unsaturated fat, omega 3. Walnut is a high-energy nutritional fruit. The walnut of Grenoble is the world's first "Controlled Designation of Origin" (Protected Designation of Origin). The Controlled Designation of Origin was given in 1938.
